There are few foods which taste this great that need such minimal amount of effort. The salad is cooling so it is ideal for this scorching hot weather. It is also surprisingly filling and can be eaten as a meal on its own.
4 garlic cloves, lightly crushed
2mid-sized cucumbers cut into ¼ pieces
1 teaspoon (or more) kosher salt
4 celery stalks, thinly sliced on a diagonal
2 tablespoons fresh lemon juice
2 olive oil
2 avocados, halved, pitted, sliced
2 tomatoes cut in wedges
1/4 cup torn fresh basil leaves
- Lightly pound garlic until well mashed.
- Put cucumbers, salt, lemon juice olive oil, celery stalks and garlic in bowl and mix. Let them marinate for 1-2 minutes.
- Put avocado slices on plates and pour the salad all over. Add more salt if necessary and garnish with torn fresh basil leaves.
